My All-Time Favorite Healthy Ciabatta 🍞✨

Some recipes just stay with you forever, the kind you keep coming back to, week after week, because they feel like home. For me, that’s this ciabatta.

It’s dense, flavorful, wholesome, and the perfect base for endless toppings. I’ve been making it for months, and while it started out as a simple bread flour mix recipe, I’ve since turned it into my own little signature loaf. And as you would already expect, this will also be super simple to make!

The Base Recipe 🌿


For the foundation, I use my all-time favorite flour mix: Szafi Reform bread flour mix, it's low carb, gluten free, paleo and actually tasty.

Here’s what goes in:


  • 200 g Szafi Reform bread flour mix

  • 3 g Himalayan salt

  • 20 g apple cider vinegar

  • 30 g coconut oil

  • 2 eggs

  • 2 dl water



Simple, right? But here’s where the magic begins…


My Twist on the Classic ✨


To make this ciabatta truly mine, I add a few extras that make all the difference:


  • 1 tablespoon smoked sweet paprika powder (for that rich flavor and gorgeous color)

  • A spoon of garlic paste

  • A pinch of black pepper

  • Dried chives 🌱

  • A handful of sliced paprika-stuffed olives

  • A few chopped sun-dried tomatoes


All these little touches bring such depth - every bite feels rustic, cozy, and full of personality.

Shaping the Loaf 🥖


Once everything is mixed together, I cover the dough with a clean kitchen towel and let it rest for 10 minutes. Then I give it a quick knead (just a minute is enough) and shape it into a baguette.


My favorite part? Twisting it gently 2-3 times before baking. That little move gives it that rustic, perfectly imperfect ciabatta look. Sometimes I brush the top with olive oil, however I find that without the oil, it comes out extra crunchy and more rustic, giving "real" ciabatta vibes.


Baking & Cooling


Bake in a preheated oven at 200 °C for 40-50 minutes.

Once it’s done, transfer it to a rack to cool completely - this way the bottom doesn’t get soggy, and you get that perfect crispness all around.


How I Love to Eat It 🍅🥑


This ciabatta has become my everyday go-to. In the mornings, I’ll slice it up and top it with:


  • Hummus & olives

  • Creamy avocado spread & cherry tomatoes

  • Whipped cream cheese & smoked ham

  • Sheep’s curd & honey

  • A burrata & peach slices



Every bite reminds me why this bread is my ultimate kitchen staple. It’s wholesome, versatile, and honestly just makes every breakfast feel a little extra special.
