Caramelized Onion & Mozzarella Dip 🧅🧀🍯

Some recipes are born out of pure practicality, like needing something quick and delicious to take to work for lunch.
But then, when you taste it, you realize you’ve just created something that feels… special. That’s exactly what happened with this dip (or should I say spreadable cream cheese magic).

It’s creamy, savory, a little sweet, and with that perfect spicy kick on top. Honestly, it feels like a little jar of happiness, and it makes even the simplest slice of bread taste like heaven.
The Recipe
Here’s what you’ll need for this creamy mozzarella-based dip:
2 small red onions, diced 🧅
2 fresh mozzarella balls 🧀
3 tbsp Greek yogurt 🥄
1 tbsp olive oil 🫒
1 tsp garlic paste 🧄
Salt & pepper 🧂
A sprinkle of dried chives 🌿
A drizzle of honey 🍯
A pinch of chili flakes 🌶️
Method
Caramelize the onions: In a small pan, sauté the diced red onions with a pinch of salt and a little honey until they turn soft, golden, and sweet. Set aside to cool.
Blend the base: In a blender, combine the mozzarella balls, yogurt, olive oil, garlic paste, salt, pepper, and dried chives. Blend until smooth and creamy.
Mix it up: Transfer the cream to a serving bowl, fold in the caramelized onions, and stir gently.
Final touch: Drizzle with honey, sprinkle with chili flakes, and serve with your favorite bread.
How I Served It
I paired this dip with slices of my homemade toasted olive bread - earthy, flavorful and just the right amount of crunch. Honestly, the combination was out of this world. And the best part? This dip doubles as a perfect breakfast spread, snack, or even a little appetizer for a cozy evening at home.
