Cozy comfort: another traybake soup recipe 🍲
I have to confess… I’ve never actually made a proper tomato soup before. Sure, I’ve eaten it countless times: grandma’s version with letter pasta, mom’s creamy one with csipetke (pinched pasta), even the instant packs during busy weeks. But making it from scratch? That was uncharted territory for me (never actually thought about it).
That is, until I discovered the magic of traybake soups. After my butternut squash soup experiment, I thought, why not try the same method with tomatoes? Turns out, it’s simple, cozy, and absolutely delicious.
What You’ll Need 🍅
3 large beefsteak tomatoes
2 vine tomatoes
6 cherry tomatoes
1 capia pepper
1 large onion
2 small garlic bulbs
1 can coconut milk
Olive oil
Salt, pepper, basil, oregano, dried jalapeño pepper
How to Make It 🧄
Wash and cut up all the veggies, except for the cherry tomatoes
Slice off the tops of the garlic bulbs to expose the cloves
Arrange everything on a baking tray, drizzle generously with olive oil, and sprinkle with seasoning
Bake in a preheated oven at 200 °C for about 40 minutes, until everything is soft and caramelized
Transfer the roasted goodness into a pot, squeeze out the garlic, add the water from the baking tray and the coconut milk, and blend until silky smooth 🍲

A Little Extra 🍞🧀
Add mini mozzarella balls while the soup is still hot, it melts into little strings of happiness 🧀
Serve with garlic bread, buttery toast, or even a simple baguette for the ultimate cozy meal 🥖
Who knew making soups is actually this easy? (... well I didn't 🤣) Honestly, from now on I will always make it this way, and it really made me want to keep experimenting in the world of soups. 😍
